Your guests won't remember the menu. They'll remember whether they went hungry
Search for "wedding food" and you get Pinterest boards full of beautiful dishes. None of them tells you how that plate reaches 120 people at the same time, how many waiters it takes, or what happens to the buffet at eleven at night. Wedding food rarely fails because of the recipe. It fails because of the format: it arrives cold, it arrives late, or it reaches only half the tables.
The short answer
Wedding food is decided first by the service format and then by the dish: plated courses, buffet, food stations, family style, cocktail or taco bar. Each format changes the staff, the tableware and the serving time, and that is why it changes the price. Ask for a per-person quote, itemized, with the same guest count in every quote, stating what it includes: waiters, tableware, setup and drinks.
Format first, dish second
| Format | How it works | Where it gets tricky | What to ask |
|---|---|---|---|
| Plated courses | Starter, main course and dessert served at the table | Everyone eats at once, so it depends on how many waiters there are per table | How many waiters are included and how many tables does each one cover? |
| Buffet | Guests serve themselves at a counter | The line, and keeping food at the right temperature for the whole service | How many serving lines for my guest count? |
| Food stations | Several themed tables instead of a single counter | Takes more space and more setup | How many stations and how many people staff each one? |
| Family style | Platters in the middle of each table | More tableware and tables with room for the platters | How many platters per table, and how are they refilled? |
| Cocktail or canapés | Bites passed on trays | It is not dinner; if the party is long, people leave hungry | Is it a complement or the whole dinner? |
| Taco bar or Mexican snacks | Informal counter, often late at night or as the main dinner | Works badly if it runs out | Until what time is it refilled, and how many pieces per person? |
You don't have to pick just one. You can combine them: a welcome cocktail, plated courses for dinner and a snack bar at midnight. What you do need to know is which format is the main meal, because that is the one that has to feed everyone.
What caterers registered on Katiblé offer
As of October 19, 2026, Katiblé has 25 active catering services. Not all of them completed their profile, so these counts are over the ones that answered each question. It is a small, self-reported sample: it shows patterns, not market averages.
- Service style (13 answered): 12 offer buffet, 12 food stations, 9 formal plated dinner, 9 cocktail, 6 family style and 2 food truck.
- Special menus (13 answered): 12 offer vegetarian, 10 vegan, 8 children's and 6 gluten-free.
- Specialties (12 answered): 11 cocktails or drinks bar, 9 taco bar or Mexican snacks, 9 plated multi-course menu, 9 cheese and charcuterie table, 8 brunch or breakfast.
- Drinks (11 answered): 8 handle an included open bar, 5 wine and beer only, 5 corkage and 3 pay-as-you-go.
What this tells you: 12 of the 13 that answered offer two or more formats, so a mix of cocktail, dinner and late-night snacks can be negotiated with the same vendor. And since 12 of 13 have a vegetarian menu, don't ask for it as a special favor: include it from the first quote.
How much does a wedding banquet for 100 (or 50) guests cost
There is no official figure for the price of a wedding banquet in Mexico. On Katiblé, eight caterers declared a starting price, but the form does not ask for the unit, so we can't be sure whether it is per person or per event, and we won't publish it as if we knew.
What does work is the formula. A catering quote is built like this:
price per person × confirmed guests + staff and overtime + drinks + whatever is not included (tableware, linens, furniture, setup) + taxes.
Three usual traps:
- Confirmed guests, not the guest list. Ask for the minimum guest count they charge and the deadline to adjust the number. If your list isn't closed yet, start with how to build the guest list without fighting half the family.
- VAT. Make the quote state whether the per-person price already includes it.
- Drinks. Included open bar, wine and beer only, pay-as-you-go or corkage are four different bills. Compare the same one.
To compare without losing your mind, put the three quotes in a table:
| Item | Quote A | Quote B | Quote C |
|---|---|---|---|
| Price per person (with or without VAT) | |||
| Minimum guest count | |||
| Format and number of courses | |||
| Waiters included and service hours | |||
| Tableware, linens and setup | |||
| Drinks and corkage | |||
| Tasting (included or paid) | |||
| Overtime cost |
Mexico's consumer protection agency (PROFECO) recommends comparing at least three options and hiring in writing, and reminds that social-event vendors must register their standard-form contracts with the agency (NOM-174-SCFI-2007). If the food is outdoors or on the beach
Heat is merciless with a buffet. Mexico's food hygiene standard NOM-251-SSA1-2009, which applies to whoever processes and serves food (Official Gazette, March 1, 2010), requires hot food to be kept above 60 °C and cold food at 7 °C or below (section 7.3.3), buffets and counters to respect those temperatures (section 7.1.1), reheated food to reach at least 74 °C (section 7.3.2), and displayed food to be covered (section 7.4.8).
In questions: how do you keep the buffet hot, what refrigeration does the cold food travel in, and how long does it take from the kitchen to the table? A caterer who answers that without hesitating is telling you more than the photo of their dish.
Simple food that doesn't look like a cutback
If the budget is tight, don't start by changing the ingredient. First ask the caterer how much the quote changes if you drop a course, switch from plated to family style or stations, or make the main dinner a taco bar that is refilled until the end. Each format uses different staff and different tableware, and the difference shows up in the itemized quote.
Verdict
Choose the format by the time of day, the place and the number of guests; the dish comes after. A three-course menu served badly is worse than a well-run taco bar, and a cheap quote that doesn't include waiters isn't cheap. The question that decides it is not "what are we eating" but "how does the food reach table 14".

Frequently asked questions
What kind of food can you serve at a wedding?
Anything the format can serve well: plated courses, buffet, food stations, family style, cocktail or taco bar. Among the 13 caterers on Katiblé that declared their service style (October 2026), 12 offer buffet, 12 food stations and 12 handle two or more formats.
What are the main dishes at a wedding?
In a plated menu, the classic structure is starter, main course and dessert; the main course is a protein with a side, and a vegetarian option is a good idea. With a buffet or stations there is no single main dish: there are several options, and at least one should be filling.
How much does a wedding banquet for 100 guests cost in Mexico?
There is no official figure. The total is the price per person times confirmed guests, plus staff, drinks, whatever is not included and taxes. Ask for three quotes with the same guest count and the same format, and compare them line by line.
What does wedding catering include?
It depends on the contract. Confirm in writing whether it includes waiters and for how many hours, tableware, linens, setup and cleanup, drinks, a tasting, and the cost of each extra hour.
What simple food can I serve at a wedding?
A taco bar, family style or stations with a few well-made options. Simple works if food is refilled until the end and the main meal is enough for everyone.
How long can food sit on a buffet?
NOM-251-SSA1-2009 does not set a maximum time: it sets temperatures. Hot food must stay above 60 °C and cold food at 7 °C or below for the whole service. Ask the caterer how they guarantee it, especially at an outdoor event.
